Maple glazed ham

Makes enough for a 6-8 lb ham.

This can be used on either a boneless or bone-in ham. Both are fully smoked and are roasted to be thoroughly heated.

It takes approximately 20 mins per pound to roast, the center should read 140 °F.

Preheat over to 300 °F.

Ingredients:
3/4 cup maple syrup
1/2 cup brown sugar
3 tsp Dijon or grainy mustard
1 tbsp orange zest
1 tbsp chopped rosemary
Several good grinds of black pepper

Directions:
Thoroughly mix all the ingredients in a bowl and set aside.
For a slightly less sweet version, whisk in 1-2 tbsp of apple cider vinegar.

The best size of baking dish is one only slightly bigger then the ham, but any will do. Line with foil and lightly oil the bottom. Place the ham cut side down and brush with the glaze. Bake, brushing with the glaze every half hour.

Rest the ham for at least 15-20 minutes before cutting and serving.
